Prepare the spinach, wash the spinach thoroughly, blanch it in hot water for 2-3 minutes, drain, and chop finely.
Saute Aromatics, heat ghee in a pan, add cumin seeds, chopped garlic, and dry red chilies. saute for a few seconds.
Cook onions and spices, add chopped onions and saute until translucent. then, add green chili, turmeric, and chili powder, and saute briefly.
Add spinach, mix in the prepared spinach and salt. cook for 2-3 minutes, stirring occasionally, and transfer to a serving dish.
Prepare tadka, in a small pan, heat ghee, add cumin seeds, sliced garlic, and dry red chili. fry until garlic is golden.
Garnish and serve, pour the tadka over the spinach and garnish with sliced tomatoes. serve hot with roti or rice.
