Heat oil, in a pan, heat oil and add mustard seeds, cumin seeds, and curry leaves.
Saute aromatics, add chopped onions and garlic, and saute until golden brown.
Cook the beetroot, add grated beetroot and cook for 3-4 minutes until soft.
Blend everything, let it cool, then blend with grated coconut, tamarind, green chilies, and salt.
Adjust consistency, add a little water while blending for a smooth chutney texture.
