Heat oil & temper, heat oil in a pan, add mustard seeds, dried red chili, curry leaves, and hing.

Saute onion & tomato, add chopped onions and saute until soft. add tomatoes and cook until mushy.

Cook the vegetables, add chopped vegetables, turmeric, salt, and saute for 2 minutes.

Add sambar powder, stir in sambar powder and mix well for enhanced flavor.

Thicken with rice flour or besan, mix rice flour or besan with 2 tbsp water and add to the sambar to thicken it.

Add tamarind pulp & water, pour in tamarind pulp and water, then let it simmer for 10-15 minutes until the vegetables are tender.

Garnish & serve, turn off the heat, garnish with coriander, and serve hot with rice, idli, or dosa.
