Temper the spices, heat coconut oil in a pan, add mustard seeds, let them splutter. add curry leaves, green chilies, and sliced onions, saute until golden brown.

Add ginger-garlic & spices, stir in ginger-garlic paste and sauté until the raw smell disappears. add turmeric, red chili, coriander powder, and garam masala, cook for 30 seconds.

Cook the tomatoes, add chopped tomatoes and cook until they soften and the oil starts separating.

Pour coconut milk, lower the heat and pour coconut milk, stirring well. Let it simmer for 2 minutes.

Add boiled eggs, slice the boiled eggs slightly and add them to the curry. sprinkle black pepper powder, mix gently, and let it simmer for 5 minutes.

Adjust seasoning & simmer, add salt to taste, stir well, and let the curry thicken to the desired consistency.

Serve hot & enjoy, garnish with fresh curry leaves and serve hot with appam, parotta, or steamed rice.
