Here's how to make Lemon Coriander Soup at home in 6 steps.

Saute the Aromatics, heat oil in a pot. Add minced garlic and chopped onion. saute until fragrant and the onions turn translucent.

Cook the Vegetables, add chopped carrot and capsicum to the pot. cook for 2-3 minutes until slightly tender.

Add Stock, pour in the vegetable stock or water. bring the mixture to a boil, then simmer for 5-7 minutes.

Thicken the Soup, if a thicker consistency is desired, add the cornflour-water mixture. stir well and cook for 2-3 minutes until the soup thickens.

Add Lemon and Coriander, turn off the heat. stir in lemon juice and chopped coriander leaves for a burst of fresh flavor.

Season and Serve, with salt and pepper to taste. serve the soup hot, garnished with a few coriander leaves for an extra touch.
