Prepare the vegetables, salt eggplant slices for 30 minutes, rinse, and pat dry. fry eggplant and potato slices in olive oil until golden, then drain on paper towels.

Cook the meat sauce, saute onions and garlic, add ground meat, and cook until browned. mix in tomato paste, tomatoes, cinnamon, nutmeg, salt, and pepper, then simmer for 20 minutes.

Make the bechamel sauce, melt butter, whisk in flour, and cook for 2 minutes. gradually add milk, whisk until thick, and season with nutmeg, salt, and parmesan cheese.

Assemble the moussaka, layer potatoes, eggplants, and meat sauce in a greased dish. repeat layers and finish with an even layer of bechamel sauce.

Bake and serve, bake at 180°C for 40-50 minutes until golden. cool slightly before slicing and serving.
