Saute Vegetables, heat olive oil in a skillet, saute onions and garlic until soft, then add diced bell peppers and cook until tender.

Prepare the tomato base, add chopped or canned tomatoes, cumin, smoked paprika, salt, and pepper. simmer for 8-10 minutes until thickened.

Create wells for eggs, make small wells in the tomato mixture using a spoon.

Cook the eggs, crack one egg into each well, cover, and cook on low heat for 5-7 minutes until whites set and yolks are runny.

Garnish and serve, sprinkle with feta, garnish with parsley or cilantro, and serve hot with bread or pita.
