Prepare vegetables, dice zucchini, eggplant, bell peppers, and tomatoes. chop onion finely.
Salt eggplant, sprinkle salt on eggplant, let sit for 15 minutes, then rinse and pat dry.
Saute vegetables, saute eggplant, zucchini, bell peppers, and onions separately in olive oil until tender.
Cook tomatoes, saute garlic in olive oil, then add tomatoes and cook into a thick sauce.
Combine vegetables, mix all sauteed vegetables with the tomato sauce. add thyme, salt, and pepper.
Simmer and blend flavors, cover and simmer on low heat for 20–25 minutes, stirring occasionally.
Serve, garnish with basil and serve warm with bread or rice.
