Prepare the Paneer, cut 250 grams of paneer into cubes, season with salt and pepper, then lightly coat with cornflour.

Fry the Paneer, heat oil in a pan and shallow fry the paneer cubes until golden and crispy. set them aside on a paper towel to drain excess oil.

Saute Aromatics, in the same pan, add a bit of oil, then sauté 1 tablespoon of minced garlic, 1 tablespoon of ginger, and chopped green chilies until fragrant.

Add Vegetables, add diced onions, bell peppers, and spring onions to the pan. stir-fry on high heat for a minute or two to retain their crunch.

Make the Sauce, in a bowl, mix 2 tablespoons soy sauce, 1 tablespoon chili sauce, 1 tablespoon tomato ketchup, and 1/2 teaspoon vinegar. pour this sauce into the pan and cook for 1-2 minutes.

Combine and Serve, add the fried paneer to the sauce and toss until well coated. garnish with chopped spring onions and serve hot.
