Combine dry ingredients, in a mixing bowl, combine bajra flour, whole wheat flour, sesame seeds, carom seeds, turmeric powder, red chili powder, sugar, and salt.
Add fenugreek leaves and aromatics, incorporate the chopped fenugreek leaves and ginger-green chili paste into the dry mixture.
Mix in yogurt, add yogurt to the mixture and blend well.
Form the dough, gradually add water as needed to form a soft, pliable dough.
Rest the dough, cover the dough and let it rest for about 15-20 minutes to allow the flavors to meld.
Shape the vadas, divide the dough into small portions and roll them into balls. flatten each ball between your palms to form discs approximately 2 inches in diameter and ΒΌ inch thick.
Heat the oil, in a deep frying pan, heat oil over medium heat until it's sufficiently hot for frying.
Fry the vadas, fry vadas in hot oil without overcrowding. cook until golden brown, then drain on paper towels.
