Prepare the Millet, rinse the millet thoroughly and soak it in water for 2-3 hours. drain and set aside.
Cook the Millet, boil the millet in water until it softens and is cooked through. drain excess water if necessary.
Heat the Milk, in a pot, bring milk to a gentle boil. add saffron and crushed cardamom for flavor.
Combine Millet and Milk, add the cooked millet to the boiling milk. simmer on low heat, stirring frequently to prevent sticking.
Sweeten Naturally, stir in jaggery powder or a sugar-free sweetener like stevia, ensuring it dissolves completely.
Add Nuts and Raisins, mix in chopped nuts and raisins, letting the flavors infuse for 5-7 minutes.
Serve, pour the kheer into bowls, garnish with extra nuts or saffron, and serve warm or chilled.
