Boil the Noodles, boil water, add noodles with a little salt and oil. cook until al dente, drain, and rinse with cold water to prevent sticking.
Prepare the Veggies, finely chop onions, capsicum, carrots, and cabbage. also, crush garlic and green chilies for an authentic pahadi flavor.
Saute the Aromatics, heat oil in a wok, add crushed garlic and green chilies. saute until fragrant, then add chopped onions and cook until golden brown.
Cook the Vegetables, add chopped vegetables and stir-fry on high heat for a crunchy texture. sprinkle salt, black pepper, and red chili flakes.
Toss the Noodles, add the boiled noodles to the pan. pour in soy sauce, vinegar, and a touch of pahadi special spices. mix well.
Serve Hot, garnish with spring onions and serve hot with chili sauce or ketchup. enjoy authentic Pahadi Chowmein.
