Soak sabudana, rinse ½ cup sabudana and soak in water for 2-3 hours until soft.

Boil the milk, in a heavy-bottom pan, bring 3 cups milk to a gentle boil.

Add sabudana, drain the soaked sabudana and add to the boiling milk. stir continuously.

Simmer until thick, cook on low heat for 10-15 minutes, stirring often until sabudana turns translucent and kheer thickens.

Sweeten it, add ¼ cup sugar or jaggery and mix well until dissolved.

Enhance flavor, stir in ½ tsp cardamom powder and chopped nuts for extra taste.

Garnish & serve, add raisins and serve warm or chilled.
