Stir in the eggs with salt, pepper, and a bit of chili flakes in a bowl.
Heat some oil in the pan and spread the egg mixture, being careful not to thicken it as you whisk.
Lay a cooked roti or tortilla on top of your omelette and then gently flip it with the press.
After grilling the halves, add cheese and allow it to melt a little.
Drop some chopped onion, capsicum, or other fillings of choice into your dough, then seal it up tightly.
Briefly brown each side of the pan-fried roll and cut it up; then serve hot with ketchup or chutney.
