Soak the Rice, rinse and soak basmati rice for 30 minutes, then coarsely grind or crush it.
Boil the Sugarcane Juice, pour the sugarcane juice into a heavy-bottomed pan, and bring it to a gentle boil.
Add Crushed Rice, add the soaked and crushed rice to the boiling juice. stir continuously to avoid lumps.
Simmer & Cook, cook on low heat, stirring occasionally, until the rice is soft and the kheer thickens.
Add Flavor, mix in cardamom powder, saffron strands, and chopped dry fruits. optional, add a splash of milk for extra creaminess.
Chill & Serve, let the kheer cool completely. refrigerate and serve chilled for a refreshing summer treat.
