Prepare batter, mix besan with water to form a smooth, flowing batter. add food color if using.

Fry boondis, heat ghee in a pan, pour batter through a perforated ladle to form small droplets, and fry until soft but not crispy.

Make sugar syrup, boil sugar with water until it reaches a sticky consistency. add cardamom powder and rose water.

Soak boondis, add the fried boondis to the warm sugar syrup, mix well, and let them soak for 10-15 minutes.

Blend for soft texture, lightly blend the mixture to get a fine consistency, making it easier to bind the laddus.

Shape laddus, grease hands with ghee, take small portions, and roll them into round laddus.

Garnish & serve , decorate with chopped nuts and offer to maa saraswati as prasad on basant panchami.
