Peel and cube 3-4 potatoes, chop 2-3 tomatoes, and finely chop 1 onion.
Heat 2 tablespoons of oil in a pan, add 1 teaspoon of cumin seeds, and let them sizzle.
Add the chopped onion to the pan and cook until golden brown, about 5 minutes.
Cook chopped tomatoes with 1 teaspoon of ginger-garlic paste until softened and the oil separates.
Stir in 1 teaspoon each of turmeric, coriander, cumin powder, and salt.
Add potato cubes to the pan, mix with the tomato and spices, add 1 cup of water, cover, and cook on low until tender, about 15-20 minutes.
Garnish with fresh coriander leaves and serve hot with roti or rice.
