Here's how to make delicious Lauki ke Kofte at home.

Grate and marinate lauki, grate lauki, squeeze out water, and mix with gram flour, turmeric, chili powder, and salt.
Prepare kofta mixture, mix the grated lauki with 1/2 cup gram flour, 1/4 teaspoon turmeric, 1/2 teaspoon red chili powder, and salt to form a thick batter.
Fry koftas, shape the lauki mixture into balls and deep-fry until golden brown.
Prepare curry base, heat oil, add cumin seeds, and saute onions until golden.
Add spices and tomatoes, mix in turmeric, chili powder, coriander powder, and pureed tomatoes. Cook until oil separates.
Add lauki water, pour lauki water and additional water into the pan. simmer for 5 minutes.
Cook koftas in curry, add the fried koftas to the curry and simmer for 5-7 minutes.
Garnish and serve, garnish with coriander leaves and serve hot with roti or rice.
