Prepare the batter, mix bajra flour, rice flour, salt, and water into a thick batter. rest for 10 minutes.
Make the tempering, saute mustard seeds, urad dal, curry leaves, and green chilies in oil. add to the batter.
Add onions, mix chopped onions and optional veggies like carrots into the batter.
Cook the paniyaram, pour batter into a greased paniyaram pan, cook until golden, and flip to cook both sides.
Serve hot, serve crispy paniyaram with chutneys or sambar for a delicious meal.
