Make the dough, mix besan, ajwain, cumin, turmeric, chili powder, and salt. add water to form a stiff dough.
Shape and boil gatte, roll the dough into cylinders and boil in water for 8-10 minutes.
Prepare the gravy, heat oil, saute ginger-garlic paste, then add onions and cook until golden.
Cook tomatoes, add pureed tomatoes and cook until oil separates.
Add spices, stir in garam masala, kasuri methi, and salt. cook for 2 minutes.
Combine gatte, cut gatte into pieces and add them to the gravy. cook for 5-7 minutes.
Garnish and serve, garnish with cilantro and serve hot with roti or rice.
