Here's how to make South Indian Mysore Masala Dosa at home in just 8 easy steps.
Prepare the dosa batter, soak rice, urad dal, chana dal, poha, and fenugreek seeds for 6 hours, then grind into a smooth batter. let it ferment overnight.
Make the spicy red chutney, blend onions, red chilies, garlic, roasted chana dal, tamarind paste, and salt into a smooth paste.
Prepare the potato masala, heat oil, add mustard seeds, curry leaves, onions, green chilies, and saute. mix in turmeric, salt, and mashed potatoes, then cook for 2 minutes.
Heat the tawa & spread the dosa batter, heat a tawa and pour a ladle of batter, spreading it in a circular motion.
Apply the spicy chutney, spread a thin layer of spicy red chutney over the dosa.
Add the potato masala, place a spoonful of potato masala in the center of the dosa.
Fold & cook until crispy, fold the dosa and cook until golden brown and crispy.
Serve hot & enjoy, serve with coconut chutney and sambar for an authentic South Indian experience.
