Here’s an 8 step guide to making Rava Masala Dosa at home.

Prepare the Dosa Batter, in a bowl, mix rava, rice flour, and all-purpose flour with curd, salt, and enough water to make a thin batter. let it rest for 15-20 minutes.

Temper the Batter, heat a little oil, add cumin seeds, chopped green chili, ginger, and curry leaves. pour this tempering into the dosa batter and mix well.

Make the Masala Filling, heat oil in a pan, add mustard seeds, cumin seeds, and curry leaves. Once they splutter, add sliced onions, green chili, and sauté until soft.

Add Potatoes and Spices, add mashed potatoes, turmeric, salt, and a pinch of hing to the onion mixture. stir well and cook for 2-3 minutes until everything is mixed.

Cook the Rava Dosa, heat a tawa or non-stick pan, and pour a ladle of the dosa batter starting from the edges and moving to the center. spread it thin.

Drizzle, a little oil or gheearound the edges and cook on medium heat until the dosa turns crispy and golden brown.

Add Potato Masala, once the dosa is crispy, place a spoonful of the potato masala filling in the center.

Fold and Serve, fold the dosa in half or roll it up. serve hot with coconut chutney and sambar
