Marinate Chicken, In a bowl, mix chicken pieces with ginger-garlic paste, red chili powder, turmeric, garam masala, cumin powder, coriander powder, lemon juice, and salt. Let it marinate for 30 minutes.
Prepare Batter, In another bowl, mix gram flour and rice flour with a little water to create a smooth, thick batter. Add salt and a pinch of chili powder for flavor.
Heat Oil, in a deep pan on medium-high heat for frying.
Coat Chicken, Dip the marinated chicken pieces into the gram flour batter, ensuring they are fully coated.
Test Oil, Drop a small amount of batter into the oil to test the heat. If it sizzles and rises to the top, the oil is ready.
Fry Chicken, Fry the coated chicken pieces in batches until they turn golden brown and crispy on all sides, usually 5-7 minutes.
Drain Excess Oil, Remove the pakoras using a slotted spoon and place them on a paper towel to absorb excess oil.
Serve, hot with chutney or ketchup as a snack or appetizer.
