Preheat the Oven, preheat your oven to 350°F (180°C). grease and line a baking pan with parchment paper.
Prepare the Apple Mixture, in a bowl, mix the diced apples with cinnamon and a bit of sugar. Set aside to allow the flavors to meld.
Mix Wet Ingredients, in a separate bowl, whisk the melted butter, brown sugar, eggs, and vanilla extract until smooth.
Combine Dry Ingredients, in another bowl, sift together the flour, baking powder, and salt.
Combine Wet and Dry Ingredients, gradually add the dry ingredients to the wet mixture, stirring gently to combine.
Fold in the Apples, gently fold the cinnamon-coated apple pieces into the batter, making sure they are evenly distributed.
Bake, pour the batter into the prepared baking pan. spread it evenly and bake for 25-30 minutes, or until a toothpick comes out clean.
Cool and Slice, let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Once cooled, slice into bars and serve.
