Prepare the cauliflower, cut the cauliflower into florets and soak them in hot salted water for 5 minutes to remove any impurities. drain and set aside.
Saute aromatics, heat oil in a pan over medium heat. add cumin seeds and let them sizzle. add chopped onions and saute until golden brown.
Add ginger-garlic paste, incorporate ginger-garlic paste into the pan and cook until the raw aroma dissipates.
Introduce tomatoes and spices, add chopped tomatoes and slit green chilies. cook until the tomatoes become mushy. stir in turmeric powder, coriander powder, and salt. mix well.
Add cauliflower, add the drained cauliflower florets to the pan. mix to coat them with the spice mixture.
Cook the curry, cover the pan and cook on low heat until the cauliflower is tender, stirring occasionally. if needed, add a splash of water to prevent sticking.
Finish and serve, once the cauliflower is cooked, sprinkle garam masala over the curry. garnish with chopped fresh coriander leaves. serve hot with rice or flatbreads.
