Prepare the Veggies, chop broccoli, onion, and bell pepper, steam broccoli if desired.
Whisk the eggs, beat eggs with salt and pepper until smooth.
Saute Vegetables, heat oil, saute onion and bell pepper for 2-3 minutes.
Add broccoli, add broccoli to the pan, saute for 2 minutes.
Pour in eggs, pour whisked eggs over veggies, let edges set.
Cook the Omelette, cover and cook on low heat for 3-4 minutes, add cheese if desired.
Serve, slide onto a plate, fold, and serve hot.
