Prepare ingredients, slice protein, vegetables, and chop herbs.
Fry Paste, heat oil, stir-fry green curry paste until fragrant.
Add coconut milk, mix in half the coconut milk and simmer.
Cook Protein, add your choice of protein and stir to coat with the curry mixture.
cook until the protein is partially done.
Add vegetables, toss in vegetables and remaining coconut milk, simmer.
Season, add fish sauce, palm sugar, and lime juice to taste.
Finish & serve, stir in thai basil, serve with rice.
