Here's how to make authentic Gujarati style Khichu at home.

Boil water, in a deep pan, bring 2 cups of water to a boil. add salt, cumin seeds, carom seeds, and a few drops of oil to enhance flavor.
Add baking soda, stir in the baking soda to make the mixture light and fluffy.
Add rice flour, reduce the heat to low and gradually add rice flour to the boiling water while stirring continuously to prevent lumps.
Mix and cook, stir the mixture well until it thickens and forms a smooth dough-like consistency. cover and cook on low heat for 2-3 minutes.
Add oil, drizzle sesame oil over the dough and mix well to make it smooth and prevent sticking.
Shape the Khichu, scoop out portions of the dough and shape them into small balls or patties, as desired.
Serve hot, serve the khichu warm, drizzled with sesame oil or ghee. sprinkle pickle masala or chili powder on top for added flavor.
