Cook the carrots, heat 5 tbsp ghee in a pan, add grated carrots, and a pinch of salt. cook until the color changes. add sugar, cardamom, cashews, and pistachios.

Prepare the halwa base, add 2 cups almond flour, stir, and cook covered for 10 minutes until caramelized. mix in raisins and flax meal, then let it cool.

Set the base, line a 9-inch cake pan with parchment paper, spread the carrot halwa evenly, and set aside.

Make the cheesecake layer, blend cashews, sugar, vanilla, milk, lemon juice, and salt until smooth. let it rest, then blend again to adjust sweetness.

Assemble the cheesecake, pour the cheesecake mixture over the halwa base, spread evenly, and garnish with nuts.

Freeze and set, freeze for 2-3 hours or until fully set for smooth slicing.

Slice and serve, remove from the freezer, slice as desired, and enjoy this unique dessert.
