Marinate the Mutton, mix 500 g mutton with 1 cup curd, 1 tsp turmeric, 1 tsp chili powder, and 1 tbsp ginger-garlic paste. let it rest for 1-2 hours.
Prepare the Masala, heat 3 tbsp mustard oil, add bay leaves, cloves, cinnamon, and cardamom. saute 2 chopped onions until golden.
Cook the Mutton, add marinated mutton and cook for 10-12 minutes until browned.
Add Spices, mix in 1 tsp cumin, 1 tsp coriander powder, and 1/2 tsp garam masala. stir well.
Simmer with Curd, add 2 cups whisked curd and 1 cup water. cook on low heat for 30-40 minutes until tender.
Thicken the Gravy, mix 1 tbsp roasted gram flour with water and add to the curry. simmer for 5-7 minutes.
Serve, garnish with coriander and serve hot with rice or siddu. enjoy this tangy, flavorful dish.
