Here's a simple recipe to make Banana Pakora.

Peel and slice the raw bananas; optionally soak in salted water to prevent browning, then drain and pat dry.

Mix besan, rice flour, cumin seeds, turmeric, red chili powder, garam masala, ajwain, baking soda (if using), and salt in a bowl.

Add finely chopped onion and green chilies to the dry ingredients. Mix well.

Gradually add water to the dry ingredients, mixing until you achieve a thick batter that coats the banana slices.

Heat oil in a deep frying pan or kadhai over medium heat.

Dip banana slices in batter, fry in batches in hot oil until golden and crispy, about 3-4 minutes per side.

Drain pakoras on paper towels and serve hot with chutney or ketchup.
