Wash bhindi thoroughly and pat dry completely. remove the tops and make a vertical slit without cutting through fully.
Prepare Stuffing Masala, dry roast besan till golden and aromatic. mix it with all the dry spices and 2 tbsp oil to form a coarse masala.
Stuff the Bhindi, carefully stuff the masala into each bhindi using a spoon or fingers. ensure it’s filled well but not overflowing.
Heat Oil and Temper, in a pan, heat 2 tbsp oil and add cumin seeds. let them splutter.
Add Stuffed Bhindi, place all the stuffed bhindi gently in the pan. spread them out in a single layer.
Cover and cook on a low flame for 10–12 minutes, stirring occasionally until the bhindi softens and cooks evenly.
Serve Hot, once tender and lightly crisped, turn off the heat. serve with hot rotis, parathas, or dal-rice.
