Make muthiyas, mix fenugreek leaves, flours, spices, and water into a stiff dough. Shape into dumplings, fry or steam, and set aside.

Prepare masala, combine coconut, coriander, sesame, peanuts, spices, ginger-chili paste, lemon juice, and salt. stuff this masala into slit eggplants and bananas.

Prep vegetables, peel and chop yams, potatoes, and other vegetables. wash and trim surti papdi and peas, blanch if needed.

Temper oil, heat oil, add mustard seeds, let them splutter, then add asafoetida and carom seeds. stir briefly.

Layer vegetables, layer yams, potatoes, stuffed vegetables, surti papdi, and peas. sprinkle masala between layers and add water.

Cook with muthiyas, place muthiyas on top, cover, and cook on low heat for 30-40 minutes, stirring gently every 10 minutes.

Garnish and serve, garnish with coriander and grated coconut. serve hot with puris, rotis, or rice.
