Here's how to make Nimki, a crispy tea time snack in just 7 easy steps at home.
Prepare the dough, in a bowl, mix flour, sooji, salt, ajwain, and ghee. add water gradually and knead into a firm dough. rest it for 20 minutes.
Roll the dough, divide the dough into small portions and roll each into a thin chapati.
Cut the shapes, using a knife or cutter, cut into diamond or square shapes. prick with a fork to prevent puffing.
Heat the oil, in a pan, heat oil on medium-low flame for deep frying.
Fry the nimki, drop the pieces into hot oil and fry on low flame, stirring occasionally until golden and crispy.
Drain and cool, remove and drain on tissue paper to absorb excess oil.
Store and serve, let it cool completely and store in an airtight container. serve with tea.
