Here's how to make Bengali Style authentic Sorshe Illish at home in just 7 easy steps.

Fry the fish, heat 2 tbsp mustard oil in a pan and lightly fry the fish for 1-2 minutes on each side. this step is optional for a softer texture.

Marinate the fish, rub Hilsa fish pieces with salt and turmeric powder. let them rest for 10-15 minutes.

Make mustard paste, soak mustard seeds in warm water for 10 minutes, then grind them into a smooth paste with a little salt and water.

Prepare the gravy, in the same pan, heat 1 tbsp mustard oil, add nigella seeds and slit green chilies. saute for a few seconds.

Add mustard paste & spices, add the prepared mustard paste, turmeric, red chili powder, and salt. cook for 2 minutes until fragrant.

Simmer with fish, pour in 1 cup of water, bring to a boil, then gently add the fish pieces. simmer for 5-7 minutes until the fish absorbs the flavors.

Serve & enjoy, drizzle a little raw mustard oil on top for an authentic bengali touch. serve hot with steamed rice.
