Prepare beetroot, boil or steam 1-2 medium-sized beetroots until tender. once cooled, peel and grate them.
Make the filling, in a bowl, mix the grated beetroot with 2 tablespoons of mayonnaise or hung curd, a pinch of salt, pepper, and optional spices like chili flakes or chaat masala.
Prepare vegetables, slice additional vegetables like cucumber, tomato, or onion for layering if desired.
Butter the bread, take 4 slices of bread and spread butter evenly on one side of each slice to prevent sogginess.
Assemble the sandwich, spread the beetroot filling on the buttered side of one slice. Add optional vegetable slices and cover with another slice of bread, buttered side down.
Toast or grill, toast the sandwich on a heated pan, grill, or sandwich maker until golden and crisp on both sides.
Serve, cut the sandwich into halves or quarters, serve hot, and enjoy with ketchup or a dip of your choice.
