Prepare spice paste, blend shallots, garlic, chilies, ginger, galangal, coriander, and cumin into a smooth paste.

Sear beef, brown beef chunks in oil and set aside.

Cook Paste, saute the spice paste until fragrant.

Add coconut milk, mix in coconut milk, lemongrass, lime leaves, and tamarind paste.

Simmer beef, add beef, reduce heat, and simmer for 2-3 hours, stirring occasionally.

Season and reduce, add sugar and salt, cook until the sauce thickens and coats the beef.

Serve, discard aromatics and serve with steamed rice.
