Here's how to make crispy Malabar Paratha to pair with tea at home in just 7 easy steps.
Prepare the dough, in a bowl, mix flour, salt, and oil. gradually add water and knead into a soft, smooth dough. let it rest for 30 minutes.
Divide & roll, divide the dough into equal-sized balls. roll each into a thin oval or rectangular shape.
Apply oil & fold, spread a little oil on the rolled dough, then pleat it like a fan. roll it into a spiral and flatten it slightly.
Roll again, gently roll the spiral dough into a medium-thick paratha without pressing too hard.
Cook on tawa, heat a tawa and place the paratha on it. cook on medium heat for a minute.
Flip & cook, flip the paratha, apply oil or ghee, and cook until golden brown spots appear. repeat on both sides.
Fluff & serve, crush the paratha lightly with your hands to separate the flaky layers. serve hot with curry or chutney.
