Here's how to make healthy Oats Khichdi at home in just 7 easy steps.
Roast the oats, dry roast oats in a pan for 2-3 minutes until golden and aromatic. set aside.
Prepare the tadka, heat ghee in a pressure cooker or pot, add cumin seeds, ginger, and green chili.
Saute onions & tomatoes, add chopped onions, saute until soft, then add tomatoes and cook until mushy.
Add spices & dal, mix in turmeric, red chili powder, salt, and soaked moong dal. saute for 1-2 minutes.
Add vegetables & oats, stir in mixed veggies and roasted oats, mixing well with the masala.
Cook Until Soft, pour in 3 cups of water, stir well, and pressure cook for 2 whistles.
Garnish & serve, once done, garnish with fresh coriander and serve hot with yogurt or pickle.
