Here's how to make crispy Poha cutlets for breakfast at home for a busy day.

Soak the poha, rinse 1 cup of poha in water and drain immediately. let it rest for 5 minutes until it softens.

Prepare the cutlet mixture, in a bowl, mix softened poha, mashed potatoes, grated carrot, onions, coriander, and green chili. add red chili powder, garam masala, cumin powder, chaat masala, and salt.

Add binding agents, mix in corn flour and bread crumbs for binding. knead into a firm dough, adjust with a little water if too dry.

Shape the cutlets, take small portions of the dough and shape them into round or oval cutlets.

Heat oil for frying, heat oil in a deep pan over medium flame. test by dropping a small piece of dough, if it rises immediately, the oil is ready.

Fry until golden & crispy, place the cutlets in the pan and fry on both sides until golden brown and crispy.

Serve hot, drain excess oil on a paper towel and serve hot with green chutney, ketchup, or masala chai.
