Prepare the ingredients, clean and finely chop the bamboo shoots. dice the vegetables like potatoes, eggplant, or jackfruit.

Heat mustard oil, heat mustard oil in a pan until it smokes slightly, then reduce the heat.

Temper with panch phoran, add panch phoran, a blend of five spices, and let it splutter. add slit green chilies for aroma.

Saute vegetables, add the diced vegetables and turmeric powder. saute for 5–7 minutes until lightly golden.

Add bamboo shoots, mix in the bamboo shoots and stir well. cook for 5 minutes to combine flavors.

Add water and simmer, pour in water to cover the ingredients. simmer on low heat until the vegetables are tender.

Adjust seasoning and serve, add salt to taste, simmer for a minute, and serve hot with steamed rice.
