Here's how to make Amritsari-Style Fish Curry at home in 7 Steps.

Marinate the Fish, clean the fish pieces and marinate them with turmeric, red chili powder, and salt. let them sit for 15–20 minutes to absorb the flavors.

Shallow Fry the Fish, heat mustard oil in a pan until it starts smoking lightly, then reduce the flame. Shallow fry the marinated fish pieces until golden and crispy on both sides. set aside.

Prepare the Base Masala, in the same pan, add more oil if needed. saute chopped onions until golden brown. add ginger-garlic paste and cook until the raw aroma disappears.

Cook the Tomato Gravy, add the tomato puree to the pan and cook until the oil starts separating from the masala. mix in red chili powder, coriander powder, and a pinch of salt. stir well.

Add the Yogurt, lower the flame and slowly add the whisked yogurt while stirring continuously to prevent curdling. cook for 5–7 minutes until the gravy thickens and the oil separates.

Simmer the Fish, gently add the fried fish pieces to the gravy. Add a cup of water and simmer for 10–15 minutes to let the fish absorb the flavors. add garam masala towards the end and stir lightly.

Garnish and Serve, turn off the heat and garnish with freshly chopped coriander leaves. serve the amritsari-style fish curry hot with steamed rice, naan, or roti for a flavorful meal.
