Prepare the Batter, in a bowl, mix 1 cup suji, ½ cup curd, and salt. add water gradually to make a smooth, pancake-like batter. let it rest for 10–15 minutes.
Add Veggies & Spices, after resting, add chopped onion, tomato, capsicum, green chilli, cumin seeds, and optional veggies. mix well. adjust water if batter is too thick.
Heat the Pan, heat a non-stick or iron tawa on medium flame. drizzle a few drops of oil and spread it evenly.
Pour the Batter, pour a ladleful of batter onto the pan and gently spread it in a circular motion like a dosa.
Cook Until Golden, drizzle a little oil around the edges. cook for 2–3 minutes on one side. flip and cook the other side until golden brown.
Serve hot with green chutney, tomato ketchup, or curd.
