Boil the eggs, boil 4-5 eggs for 8-10 minutes, peel, and set aside.

Prepare the masala, heat oil in a pan, add onions, garlic, and ginger, and sauté until golden brown.

Add tomatoes and spices, and add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt.

Add water and simmer, then pour water and simmer the curry.

Add the eggs, gently place the boiled eggs into the curry, and cook for 5-7 minutes.

Garnish with fresh coriander leaves and serve hot with rice or roti.
