Prepare the Crust, mix graham cracker crumbs with melted butter. press the mixture into the bottom of a springform pan, creating an even layer. chill in the fridge for 10-15 minutes to set.
Make the Cheesecake Filling, in a large bowl, beat cream cheese until smooth. add sugar and vanilla extract, mixing until fully combined. then, beat in the eggs one at a time until smooth.
Add Blueberries, gently fold the blueberries and lemon juice into the cheesecake batter. if you're using frozen blueberries, thaw and drain them before adding.
Bake the Cheesecake, pour the cheesecake batter over the chilled crust. bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is almost set.
Cool the Cheesecake, once baked, turn off the oven and leave the cheesecake inside with the door slightly open to cool for an hour. then, transfer to the fridge and chill for at least 4 hours or overnight.
Serve with Blueberry Sauce, top the chilled cheesecake with blueberry sauce if desired. slice and enjoy your homemade blueberry cheesecake.
