Prepare the Dough, In a large bowl, mix 2 cups of all-purpose flour, 1 tsp sugar, 1 tsp salt, 1/2 tsp baking powder, 1/4 tsp baking soda, and 1/4 cup yogurt. Gradually add water and knead to form a soft dough. Cover and let it rest for 1-2 hours.
Prepare the Filling, Mash boiled potatoes 2-3 in a bowl. Add finely chopped onions, green chilies, fresh coriander, 1 tsp cumin seeds, 1 tsp garam masala, and salt to taste. Mix everything well to create the filling.
Divide Dough and Filling, Divide the dough into equal-sized balls. Take a dough ball, flatten it, and place the potato filling in the center. Seal the edges by folding the dough over the filling.
Roll the Kulcha, gently roll the stuffed dough ball into a flat, round shape, like a paratha, ensuring the filling doesn’t spill out.
Cook on Tawa, heat a tawa and place the rolled kulcha on it. Cook on medium heat, brushing with ghee or butter, until golden brown on both sides.
Serve, hot with chole or yogurt and pickle for an authentic Amritsari experience.
