Heat oil and saute aromatics, heat mustard oil in a pan. add sliced onions and saute until golden. add ginger-garlic paste and cook for a minute.
Add tomatoes and spices, add chopped tomatoes, turmeric, red chili powder, and salt. cook until the tomatoes turn soft.
Mix in pickle and chickpeas, stir in the mixed pickle and boiled chickpeas, mixing well with the masala.
Add rice, drain the soaked rice and add it to the pan. gently stir to coat the rice with the masala.
Pour water, add 2 cups of water, bring to a boil, then reduce the heat to low. cover and cook for 15-20 minutes.
Garnish and serve, garnish with fresh coriander leaves and serve hot with raita or salad.
