Prepare the Kundru, wash and thinly slice the kundru lengthwise into strips.
Make the batter, in a bowl, mix besan , red chili powder, turmeric, salt, ajwain ,and a pinch of baking soda. Add water to make a thick, smooth batter.
Coat the Kundru, dip the sliced kundru pieces into the batter, ensuring each piece is evenly coated.
Heat oil for frying, heat oil in a deep pan over medium heat until hot.
Deep fry the Kundru, fry the batter-coated kundru in batches, ensuring they are crispy and golden brown on all sides.
Drain and serve, once fried, drain the crispy kundru bhujia on paper towels to remove excess oil. Serve hot with chutney or as a snack.
