Prepare the batter, in a mixing bowl, combine semolina, curd, and water to form a thick batter. let it rest for 10 minutes.

Add lauki and vegetables, mix grated lauki, onion, tomato, green chili, coriander, cumin seeds, and salt into the batter. adjust water for a pancake-like consistency.

Heat the pan, heat a non-stick pan or tawa and grease it lightly with oil.

Cook the uttapam, pour a ladleful of batter onto the pan, spreading it slightly. cook on medium heat until the bottom turns golden.

Flip and cook, flip the uttapam and cook the other side until golden brown and crisp.

Serve hot, serve the lauki uttapam hot with coconut chutney, mint chutney, or ketchup.
