Here's a simple 5-step recipe to make delicious Hakka noodles at home.

Prepare the Noodles, boil water in a large pot, add a pinch of salt, and cook the hakka noodles as per the package instructions until they are al dente. drain, rinse with cold water, and toss with a few drops of oil to prevent sticking. set aside.
Saute the Vegetables, in a large pan or wok, heat a bit of oil on high heat. add finely sliced vegetables like bell peppers, carrots, cabbage, and spring onions. stir-fry for 2-3 minutes on high heat to keep them crunchy.
Add Garlic and Ginger, add finely chopped garlic and ginger to the vegetables and stir-fry for another minute until fragrant. this adds a fresh, aromatic flavor to the dish.
Season and Add Sauces, add soy sauce, vinegar, and a dash of chili sauce to the veggies. stir well to coat everything evenly. season with a bit of salt and pepper, adjusting to taste.
Combine Noodles and Toss, add the cooked noodles to the pan with the vegetables. gently toss everything together until the noodles are well-coated with the sauces and mixed with the veggies. serve hot, garnished with spring onion greens.
